Banana Protein Muffins

I’m always on a mission to find new recipes that put a create, delicious spin on healthy foods. Not going to lie sometimes I miss indulging in a muffin or a cookie. But just because I eat healthy doesn’t mean I can’t still enjoy these treats. Last night I found a recipe for banana protein muffins, that turned out amazing. These muffins are low in calories, and jam packed with whole foods that will help fuel your body. These little bad boys will be great for a post-work out snack.

Banana Protein Muffins

What your sexy self will need:

1. 1 2/3 cups rolled oats

2. 1 scoop of protein powder

3. 1 TBSP baking powder

4. 1/4 TSP baking soda

5. 1 TSP Cinnamon

6. 2 ripe bananas

7. 1/2 cup unsweetened applesauce

8. 1/2 cup plain greek yogurt

9. 2 large egg whites

10. 1 TSP vanilla extract

In a bowl, mix together all the dry ingredients: oats, protein powder, baking soda, baking powder, and cinnamon.

In a separate bowl, mash the bananas, and mix with all the wet ingredients: applesauce, greek yogurt, egg whites, and vanilla.

Once the wet ingredients are mixed well, combine them with the dry ingredients, and mix until just combined. Let the batter sit for 2 minutes so it can thicken.

Divide the batter into 12 muffin cups and bake for 15 minutes at 400 degrees.

To add a personal touch, I added chopped walnuts on top of the batter. Feel free to personalize your muffins to your preferences by adding chocolate chips, nuts, berries, or dried fruit to the batter.

These babies were so delicious it was hard not eat all of them at once.
